辣椒果实所含辛辣成分为辣椒碱类物质,包括:辣椒碱(Capsaicin),二氢辣椒碱(Dihydrocasaicin),降二氢辣椒碱(Nordihydrocapsaicin),高辣椒碱(Homocapsaicin),高二氢辣椒碱I (Homodihydrocapsaicin I),高二氢辣椒碱Ⅱ(Homodihydrocapsaicin Ⅱ) ,壬酞香荚兰胺(Nonoyl vanillylamide),辛酞香英兰胺(Decoyl va nillylamide),癸酞香英兰胺(Capryl vanillylamide)。辣椒红色素包括隐黄素(Cryptoxanthin),辣椒红素(Capsanthin),辣椒玉红素(Capsorubin),胡萝卜素(Carotene);还含维生素C,柠檬酸,酒石酸,苹果酸、蛋白质、矿物质等。种子中含有龙葵碱(Solanine),龙葵胺(Solanidine),以及澳洲茄边碱(Solamargine),澳洲茄胺(Solasodine),澳洲茄碱(Solasonine)等生物碱。 辣椒碱
